Abstract

Consuming raw or undercooked shiitake mushrooms (Lentinula edodes) may cause an itchy, linear and flagellate rash. Lentinan is a thermolabile polysaccharide of the fungu’s cell wall that breaks down at high temperatures, but if consumed raw may cause a toxic skin reaction. This typically occurs 24 hours to 5 days after ingestion. It is a rare condition, but in recent times it has been reported frequently in relation to the popularity of oriental cuisine which uses mushrooms of this species.
